Hot Honey Carrots

Sweet, spicy, and perfectly caramelised, these hot honey roasted carrots make a simple yet flavour-packed side dish. Ready in just 30 minutes, they pair beautifully with roast meats, grains, or salads for an easy, crowd-pleasing addition to any meal.

Ingredients

  • 500 g carrots
  • 2 tbsp hot honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • pinch fresh rosemary
  • 2 tbsp butter

Instructions

  • Preheat the oven to 200°C (180°C fan) / 400°F.
  • Wash, trim, and cut the carrots into even batons or chunks.

  • Toss the carrots with the hot honey, butter, salt, black pepper, and rosemary in a roasting pan until evenly coated.
    2 tbsp hot honey, 1/2 tsp salt, 1/4 tsp black pepper, pinch fresh rosemary, 2 tbsp butter
  • Spread the carrots in a single layer and roast for 20–25 minutes, turning halfway, until golden and tender.
  • Remove from the oven and serve immediately.

Notes

  • Even sizing: Cut your carrots into similar-sized pieces so they roast evenly.
  • Don’t overcrowd: Give them space on the tray; overcrowding leads to steaming instead of roasting.
  • Use good-quality honey: A floral or mild UK honey works best for balance; strong, overpowering honey can dominate the flavour.
