Our crispy potato salad is always a favourite at dinners and gatherings. Crispy potato, air fried for that delicious crunch, is adorned with a deliciously fresh and moreish dressing. The perfect side dish for any spread, and so easy to make too!
This one’s a total game-changer if you’re used to the classic potato salad with boiled spuds and loads of mayo. Instead, these air fried new potatoes are lovely and golden with crisp, crunchy edge—honestly, that texture makes all the difference. Once they’re out of the oven, I mix them with a creamy, tangy dressing (a bit of mustard, some vinegar, and a dollop of yoghurt and mayo), then throw in whatever I’ve got to hand—spring onions, tomatoes (for that pop of colour), fresh herbs. It’s proper comfort food, but with a little twist, and it always goes down a treat at picnics, BBQs, or even just a lazy Sunday lunch.

Ingredients for smashed potato salad
- New potatoes: the smaller size of these potatoes makes them perfectly bite-sized to be used in a salad. If you cannot find new potatoes, you can use King Edward or Maris Piper potatoes cut into smaller chunks.
- Olive oil: to toss the potatoes in before air frying.
- Spring onions/salad onions: add a delicate, lightly pungent flavour to the dish, along with a welcome splash of green colour.
- Cherry tomatoes: gives a little extra sweetness and colour to the dish.
- Mayonnaise: smooth and creamy, used alongside the yogurt to make the base of the dressing. We used store-bought mayonnaise to make this recipe, but you could easily use homemade too if you wish.
- Greek yogurt: cooling and thick, adds a tangy creaminess to the dressing.
- Garlic: prized for its ability to enhance the flavour of dishes. The taste of garlic is bold and distinctive, and adds depth to the dish.
- Dijon mustard: this gives a smooth, tangy, and slightly sharp flavor which is balanced by the mayonnaise and yogurt.
- Apple cider vinegar: adds an extra zing to the crispy air fryer potatoes recipe.
- Dill: fresh, bright, and slightly grassy flavor with a hint of anise. It pairs wonderfully with the potatoes.
- Salt: balances and rounds off the flavours in the dish. Do taste and adjust to your personal preference.
How to make crispy potato salad
Cook the potatoes, then pop in the air fryer to crisp up. Once done, simply combine with the other ingredients, mix up the dressing and drizzle over the top. Yum!
Boil the potatoes for 15-20 minutes until fork tender and cracks appear on the skin. Drain, then gently crush the potatoes to break the skins.
Preheat the air fryer at 240C/465F for two minutes. Toss the cooled potatoes in the olive oil and crush before tipping them into the air fryer. Cook on max crisp setting for 8 minutes until brown and crisp. Cool completely once done.
To make the dressing, place the mayonnaise, yogurt, garlic, mustard and vinegar in a bowl and mix through. Tip in the tomatoes, spring onions, salt and most of the dill, then fold gently to combine.
Place the cooled crispy potatoes into a serving dish, layering with the dressing as you go. Top the smashed crispy potato salad with a generous spoonful of dressing and garnish with extra spring onions and dill. Serve and enjoy!

- Mix the dressing with the potatoes, or layer in the serving dish if you prefer, just before serving. This will help keep the texture of the potatoes as crisp as possible in this crispy air fryer potato salad.
