Can this soup be made vegan?
This soup is very easy to make vegan. All you have to do is use olive oil or vegan butter instead of dairy butter for sautéing the onions and garlic. You may need to add a touch of extra salt to replace that lost in the dairy butter. Skip the cream or yoghurt garnish – or swap it for a swirl of plant-based alternatives like oat cream, coconut cream, or unsweetened soy yoghurt.

How to make this carrot and coriander soup
This is such a super simple soup to make. All it needs are a few fresh ingredients.
Step 1: Heat the butter in a large saucepan over medium heat. Add the chopped onion and cook for 5–7 minutes until soft and translucent. Add the garlic and cook for another minute.
Step 2: Stir in the ground coriander and cook for 1–2 minutes, letting the spice toast and become fragrant.
Step 3: Tip in the sliced carrots and pour over the veg stock. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the carrots are tender.
Step 4: Add a pinch of nutmeg and season with salt and pepper. Remove from heat.
Step 5: Blend the soup until smooth using a stick blender or in batches using a blender. Add more stock or hot water if you prefer a thinner consistency.
Step 6: Stir in the chopped coriander leaves, saving a few to sprinkle on top when serving.
Step 7: Ladle into bowls and serve with crusty bread on the side.
